Cooking Chinese recipes is simple, delicious, and healthy. Most Chinese dishes are cooked in oil quickly. Cooking Chinese recipes can be kept simple and straightforward. The ingredients used for cooking Chinese recipes can be exotic. Of course there's all the common cooking ingredients used in Chinese cooking. Stir-frying is the most popular and common cooking technique used in Chinese cuisine. The most important things to know about stir-frying is preparation. Stir-frying is 90% Preparation and 10% cooking. Once you are ready stir-frying is quick so you need to be ready.
WOK ORANGE CHICKEN
8 boneless chicken breast sides or 4 whole breasts, boned
1 c. white wine
1 c. bottled duck sauce (sweet 'n sour)
1/2 c. soy sauce
1/4 tsp. garlic powder
1 1/2 c. cornstarch
Vegetable oil for frying
Juice of 1/2 an orange
Mix together the wine, duck sauce, soy sauce and garlic powder in a glass bowl. Reconstitute the garlic powder with a tablespoon of water. Cut chicken into large finger-size pieces and marinate in the bowl of sauce for at least 15 minutes, an hour is best.
Take the chicken fingers out of marinade, shaking them dry and roll them in cornstarch; lay them out on a cookie sheet or a sheet of wax paper or foil. Heat a skillet to medium with 1/2 cup of vegetable oil and stir fry quickly a handful of chicken breast fingers at a time until they are golden, about 4 to 5 minutes. Add more oil as needed when frying.
Remove from frying pan and drain them in paper towels, laid out on a cookie sheet. Thicken remaining marinade in a saucepan with a tablespoon of the dipping cornstarch mixed with 2 tablespoons of orange juice over a medium heat. Don't forget to keep stirring while it's cooking. Serve on a bed of sliced seedless, peeled oranges and drizzle the thickened marinade over them.
WOK CHICKEN
2 lbs. skinless, boneless chicken, sliced thinly
2 tbsp. peanut oil
1 tsp. paprika
1/4 tsp. pepper & garlic powder
Saute chicken in oil in wok 2 minutes. Add spices; cover and steam 2 minutes more. Add 2 cups chicken broth. Then add your choice of fresh vegetables or Chinese vegetables. Blend 3 tablespoons soy sauce with 3/4 cup chicken broth and 2 tablespoons cornstarch. Stir into chicken mixture and cook 2 minutes or until sauce is thickened. Serve with rice and chicken egg drop soup. Coconut ice cream and fortune cookies for dessert.
WOK CHICKEN IN SHERRY
Boned chicken (uncooked), 4 breasts or equivalent
MARINADE:
Vinegar
Bay leaf
Garlic powder
Marinate chicken for 1 hour. 3 tbsp. oil Salt & pepper to taste Sprinkle of cayenne pepper 1 c. chicken bouillon 1/4 c. cooking sherry
Vegetables such as cauliflower thinly sliced and green pepper or frozen green peas (shelled or unshelled) and thinly cut carrots.
Brown marinated chicken in wok in oil until no longer pink. Drain wok of any juices and reserve chicken. Stir fry vegetable combination in more oil. After vegetables are stir fried, add the chicken, the bouillon and sherry and seasonings. Bring to a boil and then lower heat. Simmer, covered, for 7-10 minutes. If vegetables are desired somewhat crisper, add them after chicken has been stewing 5 minutes.
For a delicious sauce: Drain juices into another pan except for 1/2 cup. Mix 2 tablespoons of cornstarch with this 1/2 cup. When thoroughly mixed add the cornstarch/broth to the rest of the broth and heat until thickened. Mix this sauce with the chicken and vegetables.
